- 1 lb. cod (or any flaky white fish like halibut or haddock)
- olive oil
- 1 lemon (large)
- 2 limes
- pepper
- salt
- 2 mangos (ripe, peeled and chopped)
- 1 avocado (chopped)
- 1/2 serrano pepper (seeded and diced, this can be adjusted depending on your taste for heat)
- 1/2 red onion (diced)
- 1/2 green bell pepper (or red, chopped, red is prettier but I only had green on hand)
- 1/2 cup chopped cilantro (roughly)
- 10 soft corn tortillas
- 16 oz. chickpeas (garbanzo beans)
- 16 oz. cannellini beans
- 16 oz. black beans
- 16 oz. red beans
- 1/2 red onion (chopped)
- red pepper (or 1/2 green bell, chopped)
- 1 cup tomato (chopped)
- 1/2 cup corn (grilled, cut from the cob, can be roasted if you don’t have a grill)
- 1/4 cup olive oil
- pepper
- salt
- lemon
- 1/2 cup chopped parsley
