- 1 lb. mild white fish (I used tilapia, but cod, mahi mahi, red snapper or catfish would also work)
- salt
- pepper
- 1 Tbsp. olive oil
- 10 corn (small, * or flour tortillas, warmed)
- 1 batch salsa (blueberry-almond, see below)
- 2 cups fresh blueberries
- 1/2 cup Blue Diamond Almonds (roughly-chopped, I used Blue Diamond Salt & Vinegar Almonds)
- 1/2 cup cilantro leaves (roughly-chopped fresh, loosely packed)
- 1 Tbsp. lemon juice (freshly-squeezed)
- 1 avocado (peeled, pitted and finely chopped)
- 1 jalapeno (stem removed, seeded, and finely chopped)
- 1/2 red onion (a small, peeled and finely chopped)
- 2 tsp. honey (if needed to sweeten, optional)
