- 1/2 fennel bulb (thinly sliced)

- 40 grams plain flour (heaped ¼ cup)
- 150 mL dry white wine (such as sauvignon blanc)
- 200 mL fish stock

- freshly ground black pepper
- 2 handfuls flat leaf parsley (roughly chopped)
- 2 tsp. fronds (roughly chopped dill)
- 2 tsp. tarragon leaves (roughly chopped)
- 250 grams smoked cod (or trout fillet, skin and bones removed, cut into 4cm cubes, optional)
- 700 grams snapper fillet (or similar firm white fish, skin removed, cut into 4cm cubes)
- 6 king prawns (shelled and deveined, chopped into 3 pieces)
- 130 grams frozen peas (baby)
- 2 Tbsp. finely grated Parmesan
