Description
Delicate cod is the perfect base for this fish curry. The mild white fish is cooked in a broth made of coconut milk, curry powder, turmeric, and ginger for a bold and flavorful meal. Serve this curry over a bed of brown rice for a filling meal. A sprinkle of fresh cilantro adds a bit of extra flavor and freshness to finish the dish off.

- 4 steaks (diced cod)
- 1 can coconut milk (400 ml.)
- 2 tsp. curry powder
- 2 tsp. turmeric
- 1 tsp. ginger (powdered or fresh and grated)
- 1/2 tsp. lemon zest (finely grated)
- salt
- white pepper

Directions
- In a saucepan, on low heat, bring the coconut milk, curry powder, turmeric, ginger and lemon zest to a gentle boil. Do not put on high heat so that the milk does not "turn" ; the coconut milk fat would separate from the liquid and it would not look good, but if this happens, it does not alter the taste. Once boiling, add the fish and cook slowly for 6 to 8 minutes, stirring gently.
- Serve with white rice.

Simple, easy to make and delicious. I used fresh ginger as the previous reviewer suggested. I have made it many times now and the family loved it
