Fish Burgers with Caper Mayonnaise

  • 1 cup all-purpose flour
  • 2 large eggs (lightly beaten)
  • 5 ounces panko Japanese breadcrumbs
  • 4 ounces white fish fillets (boneless)
  • vegetable oil (for frying)
  • 4 burger buns (halved)
  • 1 cucumber (shaved into strips)
  • 3 cups arugula
  • mayonnaise (Caper)
  • 1/2 cup mayonnaise
  • 1 clove garlic (finely chopped)
  • 1 tablespoon capers (chopped)
  • 1 tablespoon parsley (chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest (finely grated)

    Directions

    1. Place flour, eggs and breadcrumbs in 3 separate bowls. Dust fish fillets in flour, then dip in beaten egg, then coat with breadcrumbs.
    2. Heat vegetable oil in a large, non-stick frying pan. Fry fish for 3-4 mins each side, or until crisp, golden and cooked through.
    3. Meanwhile, to make caper mayonnaise, place all ingredients in a bowl; mix well to combine.
    4. Toast undersides of buns; top each one with cucumber ribbons, arugula, a fillet of fish, a generous spoonful of caper mayonnaise and the top of the bun.
