Description
This easy recipe for beer-battered fish and chips serves two people, so it’s ideal for an anniversary, date night or Valentine’s Day fakeaway. Fish and chips pair perfectly with Champagne or fizzy wine, too! The battered fish here also works beautifully in a taco with pickled red onions and spicy mayo.
Ingredients

- 600 grams potatoes (floury, such as maris piper, cut into 1cm thick batons)
- sunflower oil (for tossing and deep frying, about 500ml)
- 50 grams plain flour (plus extra to dust)
- 25 grams rice flour (or cornflour)
- 1 pinch paprika
- 1/2 tsp. salt
- 1/4 tsp. baking powder
- 1 pinch bicarbonate of soda
- 150 mL ale (lager or sparkling water)
- 200 grams white fish fillets (sustainable skinless, such as haddock, sole or plaice)
- mushy peas
- lemon wedges
- malt vinegar
- ketchup
- 75 grams mayonnaise (good-quality)
- 1 tsp. English mustard
- 1/2 Tbsp. gherkins (each finely chopped, green olives and capers)
- 1/2 Tbsp. fresh chives (each snipped, and chopped fresh parsley)
- lemon juice (Squeeze of)
