- 1/2 red onion (peeled and diced)
- 2 jalapeno chiles (seeded and finely diced*)
- 4 Tbsp. lime juice
- 2 cloves garlic (minced)
- 4 Tbsp. fresh cilantro (minced)
- 2 tsp. ground black pepper
- salt (to taste)

- In a large bowl, stir together all ingredients well; refridgerate at least one hour to allow flavors to meld. Makes 5 cups.
