- 1 carrot (large, chopped small)
- 1/2 tsp. fresh thyme leaves (chopped, or 1/4 tsp dried thyme)
- 1 bay leaf
- 1 small yellow onion (chopped small)
- 1 tsp. sea salt (plus more to taste)
- 1 tart apple (small, I used a Granny Smith)
- 6 oz. frozen green peas (or fresh, a bit more than 1 cup – I used petit pois, small, sweet peas)
- 1/2 tsp. coriander seeds (toasted and ground)
- 1/8 tsp. ground nutmeg (freshly)
- 1 Tbsp. dijon-style mustard (prepared, plus more to taste)
- 1 1/2 tsp. apple cider vinegar
- 1 1/2 cups vegetable broth
- 1 pinch chili flakes (Aleppo, or cayenne, to taste)
