- 6 large carrots (peeled and cut into 3" pieces, optional for keto diet I used rainbow carrots)
- 1/2 head cauliflower (pulled apart into florets)
- 3 Tbsp. olive oil (separated, some for veggies, some for steaks)
- 1/2 cup lime mayo (chipotle, store bought or homemade, if making your own see ingredients and instructions below)
- 12 oz. filet mignon steaks (room temp)
- sea salt
- freshly ground pepper
- 2 tsp. butter (or ghee for garnish, optional)
- 1 Tbsp. chives (chopped for garnish, optional)
