These Fig Toasts with Prosciutto & Goat Cheese are super easy to make and unbelievably tasty. And the colour of those figs?! So pretty. - 8 slices ciabatta bread (each piece about 1/2 inch thick)
- 2 Tbsp. olive oil
- 4 Tbsp. goat cheese
- 4 slices prosciutto (each slice halved)
- 6 figs (fresh)
- 1/4 cup arugula
- 1 Tbsp. balsamic
- 1 Tbsp. honey
- 4 tsp. black pepper

Directions
- Brush olive oil on bread.
- With oven on broil, place sliced bread on sheet pan & cook for about 2 minutes, until golden.
- Spread each piece with 1/2 tbsp goat cheese, half slice of prosciutto (cut that half into half again so it is easy to bite through; if not you may drag all of the other toppings off), 2-3 pieces of sliced fig and 1-2 leaves of arugula.
- Over your 8 pieces, drizzle balsamic vinegar and honey and top with black pepper.
