- 1 cup fresh cilantro (chopped)
- 1 lime (juice of)
- 1 lb. chicken tenders (boneless skinless)
- 1 tsp. chili powder (chipotle)
- 1 tsp. cumin
- 1 tsp. Spanish smoked paprika
- 1 tsp. brown sugar (or honey)
- 1/2 tsp. garlic powder
- 1 pinch salt (+ pepper)
- 2 Tbsp. olive oil
- 1 Tbsp. fresh lime juice
- 1 red bell pepper (OR 5-6 mini peppers)
- 1 1/2 cups rice (cooked, or brown rice)
- 4 flour tortillas
- 2 cups cheddar cheese (or pepper jack cheese, shredded, or use a mix of the two)
