Fiery Grilled Cod with Coleslaw

  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 3/4 teaspoon lime zest
  • 1 tablespoon fresh mint leaves (chopped)
  • 1 tablespoon cilantro leaves (fresh, chopped)
  • 2 cups bell peppers (julienned)
  • 1 cup jicama (julienned)
  • 1 cup seedless cucumber (julienned)
  • 1/4 cup shredded carrot
  • 1/4 cup scallions (thinly sliced)
  • 3 tablespoons vegetable oil
  • 2 tablespoons cajun seasoning (blend)
  • 36 ounces cod fillets
  • 2 cloves garlic (minced)
  • 10 ounces baby spinach (or arugula)

    Directions

    1. Preheat grill. Whisk together 1 tbsp olive oil, 1 tbsp lime juice, 1/4 tsp lime zest and herbs. Add vegetables and scallions. Toss gently to coat. Season then set aside.
    2. Whisk together vegetable oil, Cajun seasoning blend and remaining lime juice and lime zest. Brush 1/2 mixture over cod fillets and grill for 8 mins, or until fish flakes easily with fork, brushing with remaining seasoning mixture.
    3. Meanwhile, in a large frying pan, heat remaining olive oil over medium-high heat. Cook garlic for 1 min. Add baby spinach and cook for 1 min, or until just wilted. Season. Transfer to a serving platter and top with cod fillets. Serve with coleslaw.
