- 1 1/2 cups almonds (blanched, skins removed)
- 1 1/2 cups corn kernels (blanched, fresh or frozen)
- 1 cup water
- 2 Tbsp. olive oil
- 1 garlic clove (minced)
- 2 Tbsp. minced onion
- 1/2 lemon
- 2 Tbsp. agave (or honey, to taste)
- salt (to taste)
- 8 oz. fettuccine (or pasta of your choice – feel free to sub in whole grain or gluten free)
- 3/4 cup corn kernels (in addition to the corn that is in the sauce recipe above)
- 2 cups arugula (uncooked, or spinach)
- 3/4 cup cream sauce (sweet corn, from above, as much or little as you like)
- 1/2 cup pasta water (or more of reserved)
- 1/2 lemon (or more or less to taste)
- salt
- pepper
- 1/4 cup basil (chopped or torn)
- red pepper flakes (optional)
