  • 1 1/2 cups almonds (blanched, skins removed)
  • 1 1/2 cups corn kernels (blanched, fresh or frozen)
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 garlic clove (minced)
  • 2 tablespoons minced onion
  • 1/2 lemon
  • 2 tablespoons agave (or honey, to taste)
  • salt (to taste)
  • 8 ounces fettuccine (or pasta of your choice – feel free to sub in whole grain or gluten free)
  • 3/4 cup corn kernels (in addition to the corn that is in the sauce recipe above)
  • 2 cups arugula (uncooked, or spinach)
  • 3/4 cup cream sauce (sweet corn, from above, as much or little as you like)
  • 1/2 cup pasta water (or more of reserved)
  • 1/2 lemon (or more or less to taste)
  • salt
  • pepper
  • 1/4 cup basil (chopped or torn)
  • red pepper flakes (optional)
