- 16 oz. filo dough (package, unthawed, you’ll have some left over – it can be wrapped and re-frozen)
- 1/2 cup butter (melted)
- 16 oz. ricotta (container)
- 2 large eggs (beaten)
- 2 garlic cloves (minced)
- 1 1/2 cups feta (crumbled)
- 4 oz. frozen spinach (thawed and squeezed dry)
- 1/2 cup finely chopped fresh parsley
- 1 lemon (finely zested)
- 1 Tbsp. lemon juice
- 1 1/2 cups chicken breast (torn in bite size pieces, I used a rotisserie chicken)
- 1/2 cup peppers (roasted, drained well and chopped)
- 1/2 tsp. freshly ground pepper
