Description
Cooking ground beef picadillo-style with some tomatoes, onion, garlic, and chilies doesn’t take a lot of effort, but you’ll get such a big payoff in flavor you may never go back to packaged taco seasoning. Add favorite toppings like lettuce, shredded cheese, and sour cream, and you’ve got a crowd-pleaser. We went with crisp taco shells here, but feel free to substitute fresh corn or flour tortillas if you’re in the mood for soft tacos. The recipe, which makes 12 tacos, is a Yummly original created by Ericka Sanchez.
Ingredients
- 2 cups iceberg lettuce (cut into shreds)
- 3 Roma tomatoes (divided)
- 1/2 cup white onion (chopped)
- 1 serrano chili
- 2 garlic cloves
- 2 Tbsp. vegetable oil
- 1/4 tsp. dried oregano (preferably Mexican, crushed)
- 1/2 tsp. salt
- 1 1/2 lb. lean ground beef (90/10; or use 85/15 beef and drain any fat before filling taco shells)
- 1 can diced green chilies (4 oz., fire-roasted, hot or mild)
- 12 taco shells
- 1 cup shredded Mexican cheese blend
- 1 cup Mexican crema (or sour cream)
Directions
- Preheat oven to 325°F. Prepare ingredients: Cut lettuce into shreds and set aside for topping tacos. Finely chop tomatoes and set aside two-thirds for topping. Chop onion. Finely chop serrano chili (remove seeds for a milder dish) and chop garlic.
- Heat oil in a large frying pan over medium heat. Add onion and cook, stirring often, until translucent, about 3 minutes. Add oregano and garlic and cook, stirring, for 1 minute.
- Next add remaining one-third of tomatoes and the serrano chili. Season with salt. Reduce heat to medium-low. Simmer mixture, stirring frequently, until tomatoes are softened and somewhat reduced, about 10 minutes.
