- 1/2 red onion (a small, peeled and thinly-sliced)
- 2 cups pita chips (homemade or store-bought)
- 1 cup cherry tomatoes (diced)
- 1/2 cup fresh mint leaves (coarsely-chopped)
- 1/2 cup fresh flat leaf parsley (coarsely-chopped, leaves only, no stems)
- 1 batch lemon dressing (see below)
- ground sumac
- freshly ground black pepper
- 1/3 cup extra virgin olive oil
- 3 Tbsp. lemon juice (freshly-squeezed, or more to taste)
- 1 clove garlic (peeled and minced, or pressed)
- 1 tsp. sea salt
- 1 tsp. ground sumac
- 3 tsp. honey (if you’d like a sweeter dressing, optional)
