- 5 tomatoes (large, diced, or 2 14.5 oz. cans diced tomatoes)
- 5 cloves garlic (minced)
- 5 inches ginger (peeled and sliced in long strips)
- 1 yam (medium, /sweet potato, peeled and diced)
- 2 medium potatoes (peeled and diced)
- frozen spinach (As much fresh/, as you want)
- 1/2 tsp. turmeric
- 1 tsp. salt (or Herbamare, to taste)
- 6 cups water (or vegetable broth, low sodium)
- 1 1/2 tsp. roasted ground cumin
- 1 tsp. ground coriander (roasted)
- 2 tsp. cumin seeds
- 2 tsp. mustard seeds (black)
- 2 red chilli (dried, chopped, more if desired)
- 12 curry leaves (fresh or dried *optional)
- 4 Tbsp. lemon juice
- 1 handful cilantro (/coriander, chopped for garnish, optional)
