- 2 cubanelle peppers (chopped in a fine dice, can use green bell peppers instead)
- 5 cloves garlic (pounded into a paste in a molcajete or mortar and pestle, with salt)
- 1 sweet potato (large, chopped in a fine dice)
- 1 tsp. oregano
- 2 tsp. cumin powder
- 2 cups vegetable stock (or water)
- salt and ground black pepper (to taste)
- 1/4 cup chopped cilantro (for garnish, optional)
