- 1 1/2 cups water (+ 1/2 cup more if needed)
- 12 oz. asparagus (cut into 1-inch pieces, reserve at least a cup for topping)
- 4 oz. pancetta (cut into 1/4-inch pieces)
- 3 Tbsp. unsalted butter
- 1/2 white onion (chopped)
- 2 cloves garlic (crushed)
- 1 1/4 cups frozen peas (thawed)
- 2 tsp. fresh tarragon (minced)
- 3/4 cup Parmesan (grated)
- 1 Tbsp. fresh chives (minced)
- 1 tsp. grated lemon zest (plus the juice of that lemon)
