- 1 bouillon cube (veggie)
- 1 1/2 cups cherry tomatoes (sliced in half)
- 4 cups baby spinach (roughly chopped)
- 1/2 cup walnut pieces
- 1/2 cup shaved Parmesan
- 2 Tbsp. red onion (minced)
- 3 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 1 garlic clove (minced or put through a garlic press)
- 8 twists black pepper (from a pepper mill)
- 1 pinch salt
