- 1 hot pepper (small, seeded with the ribs removed)
- 1 lime (or lemon)
- 1 cup tomato juice (or water)
- 2 Tbsp. olive oil (leave out to make oil-free)
- 1 garlic clove (minced)
- 1/2 cucumber (diced)
- 1 yellow bell pepper (small, diced)
- 2 Tbsp. fresh basil (lemon or lime basil works great)
- 1 handful fresh mint leaves (chopped, orange or lime mint is my favorite)
- tomato (extra chopped, for garnish)
