Description
Lemon curd might be the most popular form of this ultra creamy spread, but other fruit flavors can be equally delectable, such as the raspberries in this recipe. Making curd is sort of a cross between jam and custard, with the fruit being cooked with cream, egg, and sugar (and butter here) until thickened. This curd is also thickened with gelatin, for extra stability. Pureeing and straining out the seeds is what gives the curd its velvety texture.

- 1 eggs
- 75 grams sugar
- 30 mL cream
- 70 grams unsalted butter
- 5 grams corn starch
- 1/2 gelatin sheet (colorless)

Directions
- Place the gelatin sheet in a bowl with cold water.
- Beat the egg with sugar and corn starch until you obtain a homogeneous mixture.
- Add the raspberries and the cream and heat this mixture over low heat, stirring until it starts boiling.
