- 3 large carrots (I cut them in half and then cut in quarters)
- 2 celery stalks (sliced or chopped)
- 1 medium onion (chopped)
- 2 boneless and skinless chicken breast (large thick)
- 6 cups lower sodium chicken broth (or regular)
- 3/4 cup pearled barley (uncooked medium)
- 1 can red beans (or white, drained and rinsed, lentils work well too)
- 1/2 tsp. sea salt (or kosher)
- 1/4 tsp. pepper
- 1 can diced tomatoes (undrained, 14.5 ounces)
- 1/4 tsp. ground turmeric
- 2 chicken (bullion cubes, start with one and taste, add another if needed)
- 1/4 cup chopped fresh parsley
