  • 2 romaine hearts (washed and torn into bite sized pieces)
  • 3 egg yolks
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 cups canola oil
  • 3 tablespoons lemon juice
  • 4 cloves roasted garlic (mashed to a paste)
  • 3 anchovies (chopped)
  • 3 tablespoons grated Parmesan cheese
  • 1 pinch salt (and pepper)
