- 1 Tbsp. balsamic vinegar
- 1 pinch salt (and garlic powder)

- 2 heads romaine hearts (rinsed and chopped)
- 4 cups arugula
- 2 cups diced chicken (cooked and, I used a rotisserie chicken)
- 1/2 red onion (diced)
- 1/3 cup apple juice (Steve’s Paleo Goods, Infused Dried Cranberries)
- 1/3 cup chopped pecans
- 2 apples (diced)
- 2 Tbsp. maple syrup
- 1 Tbsp. apple cider vinegar
- 1 tsp. Dijon mustard
- 1 tsp. minced garlic
- 1 tsp. minced shallot
- 1/4 cup olive oil
- 1 pinch salt
- 1 pinch pepper
