- 12 oz. shrimp (large, 26 to 30 count, peeled and deveined, halved crosswise)
- kosher salt
- freshly ground pepper
- 1 cup scallions (chopped, green parts only, divided)
- 1/4 cup fish sauce (such as Red Boat brand, plus more if needed)
- 2 tsp. sugar
- 1 cup jasmine rice
- 3 Tbsp. garlic (Infused Oil, made with vegetable oil)
- 1 Tbsp. minced fresh ginger root
- 8 cups water
- 5 cups bok choy (lightly packed chopped, smaller ribs and leaves)
- 3 cups Swiss chard (lightly packed chopped, smaller ribs and leaves, we used Rainbow chard)
- 3/4 cup chopped cilantro
- 1/4 cup mint (chopped)
- 4 tsp. lime juice (plus more if needed)
