Description
Easy clean-up, big flavor. For this streamlined, sheet pan version of the classic recipe, you’ll cook juicy homemade meatballs in the oven instead of browning them in a pan. Then just add jarred marinara sauce to the sheet pan to heat while you boil pasta on the stove. Finish the dish with fresh basil for authentic flavor. Tip: You can double the meatball part of the recipe and freeze a batch of raw meatballs to cook later. Defrost them overnight in the refrigerator before proceeding with the recipe. Ingredients
- cooking oil spray (or a little vegetable oil)
- 1 slice sandwich bread (white or whole-wheat, 3/4 oz.)
- 3 Tbsp. plain yogurt (full-fat or low-fat yogurt; or use buttermilk or regular milk)
- 1 large egg
- 1 tsp. Italian seasoning
- 1/2 tsp. garlic powder
- 1/2 tsp. salt (plus 1 Tbsp. for the pasta water)
- 1/2 tsp. black pepper
- 1/2 lb. ground beef (85% lean)
- 1/2 lb. ground pork (or instead of using ground beef and ground pork, buy 1 lb. of a blend of both)
- 1/4 cup finely grated Parmesan cheese (plus more for serving)
- 1 jar marinara sauce (25 to 28 oz.)
- 12 oz. spaghetti
- 1/4 cup fresh basil leaves (loosely packed)
Directions
- Preheat oven to 425°F. Line a sheet pan with aluminum foil (heavy-duty foil, if you have it, for full coverage) and mist with cooking spray. Set aside.
- Tear bread into small pieces into a large bowl (you should have 1/2 cup). Add yogurt and mash with a fork until the mixture is nearly smooth. Add egg, Italian seasoning, garlic powder, 1/2 tsp. salt, and the pepper and stir until egg is well blended. Then add ground beef, ground pork, and Parmesan and blend with a wooden spoon or clean hands until combined.
- Form mixture into 20 meatballs, using 1 well-rounded Tbsp. per meatball, and handling them gently so they stay tender. Space meatballs evenly on the prepared sheet pan.
