- 2 Tbsp. potato flour

- 1 1/2 tsp. salt
- 3 cups bread flour (+ a bit more for kneading, if necessary, I always need about 20 more grams, so lately I've just been measuring 380 at the outset.)
- 2 Tbsp. toasted wheat germ
