- 2 1/2 tsp. baking powder (double-acting)
- 3/4 cup milk (fat free)
- 3/4 tsp. salt (table)
- 1/3 cup shortening (vegetable)
- 1 cup sugar (granulated)
- 1 tsp. vanilla extract
- 2 cups flour (all purpose, enriched)

Directions
- Mix shortening, flour, sugar, baking powder and salt together. Stir in milk, egg and vanilla until there are no lumps. Spray muffin tin with Pam. Fill cups evenly, about 3/4th full. Bake at 375 for 20 minutes. Eat warm.
