- 4 cups diced chicken (cooked, I used a deli rotisserie chicken)
- 1 onion (diced)
- 4 cloves garlic (minced)
- 1/4 tsp. red pepper flakes
- 1/4 cup butter
- 1/4 cup flour
- 2 cups chicken broth (or chicken stock)
- 16 oz. cheeses (mixed shredded Italian-style, I used a packaged blend of mozzarella, smoked provolone, parmesan, and romano, divided)
- 14.5 oz. fire roasted diced tomatoes (drained)
- 14 oz. artichoke hearts (quartered, water packed)
- 1/3 cup roasted red peppers (fire, rough chopped)
- 1/4 cup capers
- 1/4 cup fresh basil (chopped)
- 4 cups penne (cooked al dente according to package directions and rinsed under cool water and drained)
