- 3 carrots (small-medium, chopped into 1/4 – 1/2 inch pieces)

- 2 cups spinach leaves (roughly chopped, or use baby spinach)
- 1 tsp. Berbere
- 1 tsp. ground coriander
- 1/2 tsp. ground cumin
- 1/2 tsp. smoked paprika (regular paprika will work too)
- 1/2 tsp. ground turmeric
- 1/2 tsp. salt (or to taste)

Way too much liquid as written. Had to add a half a can of tomato paste to thicken.

Quick and easy. Added coconut milk to thicken as too much liquid remained and didn't want to continue to reduce as the carrots would have become too soft.

Quick and easy, not as spicey as i hoped gor so next time will increase the spices.

This turned out great. I added a bit of coconut milk and some extra chickpeas and it was perfect. I had too much liquid remaining for some reason so the coconut milk helped to thicken it a bit as it cooled. So good!
