- 7 oz. shiitake mushrooms (sliced, (200g))
- 1 firm silken tofu ((160z/454g) pack, cut into 32 equal squares)
- 1/2 cup finely chopped green onion ((40g) (white and green parts))
- 8 cups broth ((1.9l), Massel beef-flavored, (*see notes))
- 1 cup coconut milk ((240ml) full-fat canned, (shake, then pour))
- 1/3 cup wheat-free tamari (80ml)
- 2 Tbsp. mushroom powder (dried shiitake, plus more to taste, see *note)
- 1 Tbsp. minced fresh garlic
- 1 Tbsp. minced fresh ginger (plus more to taste)
- 1 tsp. seasoning (beef-flavored, powder, see ***note)
- 1 tsp. mirin (plus more to taste)
- 1/8 tsp. red pepper flakes (plus more to serve)
