- 8 oz. carnitas (warmed, or spicy shredded chicken, 1 ounce of meat per enchilada)
- 1/2 cup salsa verde (homemade, recipe here or store bought green enchilada sauce)
- 1 cup Béchamel Sauce
- 2 cups fresh spinach
- sour cream
- chopped fresh cilantro
- 1/2 cup jack cheese (skim, shredded)
- 1 Tbsp. EVOO (or butter)
- 1 Tbsp. flour
- 1/2 tsp. dijon (musturd)
- 3/4 cup skim milk (warmed but not hot)
- 1/4 tsp. salt
