  • 2 liters water
  • 2 tablespoons salt
  • 3 cloves garlic
  • 1/4 onion
  • 1 cup water
  • 1 chili (guajillo, seeded and deveined)
  • 1 chipotle chili (seeded and deveined)
  • 300 grams tomato (ripe)
  • 1/4 onion
  • 8 black peppercorns
  • 5 allspice (grains)
  • 2 cloves
  • 3 cloves garlic
  • 1 1/2 cups peanuts (peeled and roasted)
  • 1 piece cinnamon stick
  • 2 1/2 cups chicken broth
  • vegetable oil
  • salt (to taste)

    Directions

    1. Place the chicken, water, salt, garlic, and onion in a large saucepan. Cook over medium heat until the chicken is cooked.
    2. Set aside and separate 2 1/2 cups of the broth to use in the sauce.
    3. Heat the water. Bring to a boil and add the chilies.
