- 2 lb. ground elk (beef is just as great! I don’t discriminate!)
- 1 mini pumpkin (small/medium, peeled and diced)
- 1 red bell pepper (diced)
- 1 yellow onion (diced)
- 2 garlic cloves (minced)
- 1 diced tomatoes (14 oz can)
- 1 tomato sauce (14 oz can)
- 1 cup chicken (or, beef or vegetable broth)
- 3 chipotle peppers in adobo sauce (chopped, found in can in the Ethnic section at store*)
- 2 Tbsp. unsweetened cocoa powder
- 1/4 cup chocolate chips (Enjoy Life, or dark chocolate chips, optional)
- 2 Tbsp. chili powder
- 1 Tbsp. cumin
- 1 Tbsp. smoked paprika
- 1/2 tsp. cinnamon
- 1 Tbsp. honey (or agave, optional)
- salt
- pepper
- 2 Tbsp. fat (I used olive oil)
