Ingredients

- 1 cup lukewarm water
- 2 1/4 tsp. active dry yeast
- 3 3/4 cups unbleached all purpose flour
- 1 1/2 tsp. kosher salt
- 2 tsp. honey
- 3/4 cup beets (pureed, about 2 large beets, roasted and peeled - plus one for the topping!)
- 4 oz. goat cheese (any cheese is fine)
- 1/2 cup Parmesan cheese (grated)
- 6 stalks asparagus (coated with olive oil, salt and pepper and then roasted, or other veggies of choice)
- 2 soft-boiled eggs (sliced)
- 1 beet (roasted, sliced)
- 6 oz. Heirloom tomatoes (or more mini, halved)
- 5 Tbsp. cream sauce (pesto, or sauce of your choice)
- 1 handful spinach (greens, kale, watercress, arugula, etc.)
