I was looking for some way to cook eggplant with the ingredients I had on hand that would compliment the Kung Pao Chicken I had planned on preparing. This recipe fit the bill. It was easy to make, requiring little time or effort. We thoroughly enjoyed the authentic flavor of this dish. Outstanding.
