I was reasonably happy with it. I had a container with several mini bococini left over in the fridge so I put them on top. I also added a layer of thinly sliced pumpkin above the bottom layer of tomatoes and below the top layer. If I made it again I would cook the eggplant on the bbq or gas burner and then peel it, to give eggplant a smokey flavour.

Very boring, wouldn't make it again. I added half a cupboard of spices to give it some flavour as it had none. Also wasn't enough, was barely enough for two.

I made this dish for dinner on a work day. It took a little longer to prepare and cook then I expected. The flavor was a tad bland, so next time I'll add more seasoning.
