- 2 medium tomatoes (chopped, 1 1/2 cups)
- 1/2 tsp. ground turmeric
- 2 cups eggplant (chopped, or use other veggies)
- 1/2 cup chopped green bell pepper (or 1/2 cup chopped carrots)
- 1 tsp. salt
- 1 cup toor dal (split pigeon peas, or split peas, washed and soaked for 15 minutes and drained)
- 2 tsp. tamarind paste
- 1 Tbsp. tamarind pulp
