Excellent, simple and deliciously satisfying recipe, it’s a keeper! I made it on the instapot (sauté mode) as per directions and added some halved kalamata olives for a Mediterranean kick, the flavors were right on point, paired with white rice, it was awesome!
Follow the author’s tip and salt your cubed eggplant beforehand, some twenty minutes prior to proceeding with the next steps.

Excellent. I just add all ingredients to a saucepan if I'm in a hurry and it bubbles away. So easy and very tasty. Healthy too.

Really good! I put the potatoes and the eggplant in the air-fryer for 20 minutes first. I also used some milk for creaminess.

Amazing! The potatoes were a little firm. I think I'll try cooking them a little before adding them or I might try using a crock pot. I cannot WAIT to have this meal again!
