I really enjoyed this recipe, but definitely have a few changes for next time I make it (also should note that I’m not on the paleo diet and am not super concerned with the nutritional facts of this dish). First change is that I definitely did not need 2 lbs of eggplant. I used a 9x13 casserole dish and 1.5 lbs (1 large and 1 medium eggplant) more than covered the three layers needed (I also had to do a few rounds of roasting eggplant which added a little time and delayed everything else). My meat sauce also turned out less like a sauce and more like a beef/onion/tomato skillet, so I think I might add some tomato paste or something to thicken the sauce and give it more of a tomato base. I also added Parmesan cheese to my first batch and loved it! As someone who recently discovered their love of eggplant and is trying to cut down on pasta/pizza, this casserole definitely hits the spot when I’m craving Italian flavors!

I used chicken instead of beef and it turned out great! I think I may use some sort of canned organic tomatoes next time to make it a little easier but no complaints here :)
