Description
With this deconstructed egg roll recipe you get to enjoy all the great flavors and textures of the Chinese-American restaurant favorite in a fraction of the time. Packaged shredded coleslaw mix helps to bring it to the finish line in a hurry. Serve with microwavable rice, or get some rice going in a rice cooker before you start the recipe. And if you’re looking for a little crunch, you can sprinkle the dish with wonton strips (often sold with salad toppings). The recipe is a Yummly original created by Ashley Strickland Freeman.
Ingredients
- 4 cloves garlic
- 1 piece fresh ginger (1 1/2 inches)
- 4 green onions (divided)
- 1 Tbsp. vegetable oil
- 1 1/2 lb. ground pork (or ground turkey)
- 6 Tbsp. soy sauce
- 3 Tbsp. packed light brown sugar
- 1 Tbsp. cornstarch
- 2 tsp. toasted sesame oil
- 16 oz. coleslaw mix
- cooked rice
Directions
- Mince garlic. Peel and grate enough ginger to make 2 tsp. Thinly slice green onions, then set them aside.
- Heat vegetable oil in a large frying pan over medium-high heat. Add garlic and ginger and cook, stirring often, until fragrant, about 1 minute. Add pork and cook, stirring often, until the meat crumbles and is no longer pink, about 6 minutes.
- Meanwhile, in a small bowl, stir together soy sauce, brown sugar, cornstarch, and sesame oil. Set aside.
- Add coleslaw mix to frying pan and cook, stirring often, until cabbage is tender-crisp and wilted, about 3 minutes. Stir soy sauce mixture into the pork and simmer until thickened, about 1 minute. Stir in half of the green onions.
- Spoon hot cooked rice into serving bowls. Top with the pork mixture and sprinkle with remaining green onions.
