- 1/2 inch fresh ginger (piece, peeled and thinly sliced)
- 4 scallions (thinly sliced, for garnish, optional)
- 6 eggs
- 2 Tbsp. cornstarch
- 3 Tbsp. soy sauce
- 1 Tbsp. rice wine vinegar
- 1 tsp. dry sherry
- 1 tsp. sesame oil
- 1 tsp. kosher salt
- 1 carrot (shredded)
- 6 oz. shrimp (peeled, deveined, and finely chopped)
- 3/4 cup water chestnuts (drained, finely chopped, and squeezed dry)
- 1/3 cup bean sprouts
- 1 cup scallions (sliced)

The pancakes are delicious we did swap cooked chicken for the shrimp, I was not however a big fan of the sauce. It just had to much going on. I am used to a basic but flavorful chicken sauce, and thought the ginger in particular put off the flavor. I normally love ginger. So we now make it with just chicken stock a little soy sauce and oyster sauce and it’s perfect.
