- 2 tsp. baking powder
- 3/4 cup corn meal
- 2 3/4 cups flour
- 12 oz. whole wheat bread (Artisan, or similar, dried and cut up into 1x2 inch pieces)
- 7 oz. foccacia bread (Asiago, cubed into 1 inch pieces and dried)
- 13 oz. cornbread (see recipe above, cubed into 1 inch pieces and dried)
- 3 celery sticks (finely chopped)
- 1 onion (finely chopped)
- 8 sage leaves (fresh, finely diced)
- 1/2 cup butter (melted)
- 1 tsp. salt (and pepper)
- 2 eggs (beaten)
- 2 cups turkey stock
- 1 cup chicken stock
