Avocado is a good addition. The salad is yummy but feels like it's missing something.

Made it twice now. First time according to the recipe and I liked it but it was a little blend.
Second time added a few sun-dried tomatoes, crumbled up goats cheese and dressing of balsamic vinegar instead of lemon juice.
Made it just right. Still easy to make.

Great recipe. I used about 75%of the lime juice Fresh would be best.
Avacado next time for sure.

This turned out very well! I love quinoa and edamame to start with. I cut the olive oil from 2bsp to 1.5 tbsp and it’s amazing. I eat it by itself but it is very good as a side dish too.

I made this as a side dish and it turned out great! My 10 year old daughter absolutely loved it as did my whole family! Everyone wanted seconds and it didn't last long. I already have them requesting I make it again!
