- 8 pasilla chiles (or ancho chiles, or a mixture of both, depending on what you're able to find)
- 4 guajillo chiles
- 4 chiles de arbol
- 2 chipotles in adobo (these come sold in a small can)
- 4 slices bacon (diced)
- 4 lb. chuck roast (diced into mediums-sized cubes)
- 1 yellow onions (large, diced)
- 6 cloves garlic (finely minced)
- 1 cup coffee (brewed)
- 12 oz. beer
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground clove
- 1/2 tsp. ground allspice
- 1 tsp. ground coriander
- 1/2 tsp. cayenne
- 2 Tbsp. ground cumin
- 1/2 chocolate (tablet of Mexican hot, try Nestle's Abuelita or Moctezuma brand, which are widely available at Mexican markets. If you cannot find them, you can substitute with semi-sweet chocolate and a little pinch of cinnamon)
- 1 Tbsp. sugar
- 1/4 cup ketchup (I know some purists would say that no chili con carne should have tomatoes, but it tastes damn good, so who cares, right?)
- salt (to taste)
- diced onions (– finely)
- shredded cheddar cheese
- corn tortillas
