- 3 garlic cloves (organic)
- 1/2 tsp. Himalayan salt (Pink, AVOID STANDARD TABLE SALT)
- 1 Tbsp. Dijon mustard (smooth Organic)
- 1 Tbsp. Dijon mustard (whole grain Organic)
- 3 Tbsp. soy sauce (naturally fermented, I found this at a farmer's market in Portland, I would avoid store bought soy sauce because of the poor ingredient profile)
- 1/2 cup blood orange juice (freshly squeezed organic, about 2 -3 oranges)
- 1 Tbsp. white wine
- 3 Tbsp. olive oil (organic)
- 3 sprigs thyme (fresh organic, home grown is best)
- 2 blood oranges (organic, sliced into ½ inch thick pieces)
- 3 Tbsp. flour (all purpose organic, for gravy)
- 4 organic carrots (large, cut in half and quartered lengthwise)
- 2 leeks (or a bunch of baby leeks, cut into 2 inch pieces and halved lengthwise if thick, If you can't find locally grown or organic leeks, try locally grown or organic fennel/anise)
- 2 cups mushrooms (washed with ends removed)
- 2 Tbsp. virgin olive oil (organic)
- Himalayan salt
