- 8 oz. button mushrooms (I like cremini but regular button mushrooms will also work)
- 8 oz. carrots (about 4 medium carrots)
- 1 large shallot
- 4 medium garlic cloves
- 3 slices thick cut bacon (smoky)
- 1 1/2 lb. boneless skinless chicken breasts
- 1/2 cup low sodium chicken broth
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 1 Tbsp. butter
- 4 cloves garlic (finely minced)
- 2 Tbsp. tomato paste
- 1 1/2 cups dry red wine (I like a Burgundy or Pinot Noir but almost any dry, red wine will work!)
- 3 cups chicken broth (maybe a bit more)
- 1 tsp. brown sugar
- 2 tsp. low sodium soy sauce
- 2 bay leaves (medium)
- 1 tsp. Herbes de Provence
- 5 fresh thyme sprigs (medium-size)
- 2 tsp. chopped fresh rosemary (finely, divided)
- 1 tsp. brown sugar
- 1/2 tsp. kosher salt (more to taste)
- 2 Tbsp. butter (soft)
- 2 Tbsp. all purpose flour
- 1 1/2 cups pearl onions (frozen, thawed)
- 1 large egg white (from one large egg)
- 2 tsp. corn starch
- 2 tsp. apple cider vinegar (any kind of vinegar will work)
- 1 tsp. extra virgin olive oil
- 1 cup frozen peas (tiny, thawed)
- fresh thyme leaves (optional)
- rosemary sprigs (optional)
