Description
Richly flavored with saffron, garlic, seafood, and smoked sausage, this delicious paella will transport you to sunny Spain — but in less time than it takes to pack a suitcase. There’s no special pan needed, and the ingredients are all available at a supermarket, so you can enjoy the vibrant one-pot meal any day of the week. - 2 1/2 cups chicken broth
- 1 cup dry white wine
- 1/2 tsp. saffron threads
- 1 yellow onion
- 3 cloves garlic
- 12 oz. smoked sausage (up to 14 oz., such as Hillshire Farms; or use andouille sausage or cooked Spanish chorizo sausage, if available)
- 1 lb. mussels
- 2 Tbsp. extra-virgin olive oil
- 14.5 oz. diced tomatoes (1 can, undrained)
- 2 cups paella rice (such as bomba, or other short-grain white rice such as arborio)
- 1/2 tsp. kosher salt
- 1 tsp. smoked paprika
- 1 lb. large peeled, deveined shrimp (preferably with the tails left on, 26-31 per lb.)
- chopped fresh parsley
- lemon wedges

Directions
- Heat chicken broth and wine in a medium saucepan over medium heat until bubbles form around the edges. Stir in saffron and remove pan from heat. Cover and set aside.
- Meanwhile, chop onion and mince garlic. Slice sausage on a diagonal about 1/3 inch thick. Pull any beards from mussels and scrub them with a vegetable brush under running water. Set ingredients aside.
- Heat olive oil in a wide 3 1/2-qt. saute pan or 12-inch frying pan over medium-high heat. Add sausage and cook, turning as needed, until browned on both sides, about 5 minutes. Transfer sausage to a bowl and set aside.
