  • 1 onion (large, peeled and roughly chopped)
  • 2 garlic cloves (peeled and finely chopped, minced or grated)
  • 1 red pepper (deseeded and roughly chopped into chunks)
  • 1 courgette (zucchini washed and coarsely grated)
  • 1 can chopped tomatoes
  • 1 stock cube (veggie, + 200 ml freshly boiled water)
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon dried oregano
  • 1/2 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cacao powder (optional)
  • 2 tablespoons olive oil (or rapeseed)
  • 400 grams green lentils (drained and rinsed)
  • 400 grams black beans (drained and rinsed)
  • 400 grams mixed beans (or kidney beans drained and rinsed)
  • 340 grams sweetcorn (see notes)
  • 1 bunch fresh coriander (cilantro chopped)
