- 1 onion (large, peeled and roughly chopped)
- 2 garlic cloves (peeled and finely chopped, minced or grated)
- 1 red pepper (deseeded and roughly chopped into chunks)
- 1 courgette (zucchini washed and coarsely grated)
- 1 can chopped tomatoes
- 1 stock cube (veggie, + 200 ml freshly boiled water)
- 1 Tbsp. ground cumin
- 1 Tbsp. ground coriander
- 1 Tbsp. dried oregano
- 1/2 tsp. chili powder
- 1 tsp. smoked paprika
- 1 tsp. cacao powder (optional)
- 2 Tbsp. olive oil (or rapeseed)
- 400 grams green lentils (drained and rinsed)
- 400 grams black beans (drained and rinsed)
- 400 grams mixed beans (or kidney beans drained and rinsed)
- 340 grams sweetcorn (see notes)
- 1 bunch fresh coriander (cilantro chopped)
